Homemade Kesar Malai Ladoo Recipe

Ingredients:
1 liter full fat milk
200 gms paneer /cottage cheese ( homemade or fresh)
1/2 cup sugar
7-8 kesar strands
1/2 tsp kesar powder ( optional)
some sliced pistachio for garnishing
Method:
Grate the paneer and then mash it well with the hands. Keep aside for future use.
In a pan add 1 tbsp water then pour the milk and keep cooking on high to medium flame stirring so that it does not burn or stick to the bottom. Keep scraping the milk from the sides of the pan and cook till the milk is reduced to almost 1 cup.
Add the sugar, kesar strands and kesar powder and again cook on medium flame till the sugar melts completely. Then add the grated paneer and cook stirring continuously on medium flame till the mixture leaves the sides and the mixture comes together.
Remove in a plate and when the mixture is slightly cooled down roll into small round shape balls. Place 1-2 slices of pista on the ladoo.
It can be stored in the refrigerator for 4-5 days.
