Homemade Bihari Sattu Ka Paratha Recipe

Ingredients for Dough:
3 cups wheat atta or multigrain atta
1/2 tbsp salt
1/2 tsp ajwain/carom seeds
Ingredients for Filling/Stuffing:
1 cup sattu atta ( roasted gram atta )
1 big onion chopped finely
1 tbsp chopped garlic
3-4 green chillies chopped finely
1/4 cup chopped coriander leaves
1/2 tsp turmeric powder
1 tsp kashmiri chilli powder
3 tbsp homemade pickle masala
1 tbsp mustard oil preferably
salt as per taste
oil for cooking
Method:
In a bowl add all the ingredients of the dough and mix well. Slowly add water to the atta and knead into a soft dough. Make a smooth ball and keep aside for future use.
Mix all the ingredients of the filling together and bind it well to form a dough. Keep aside.
Make equal size balls of the entire dough. Take one ball , dust some flour on a rolling board and roll into a small disc then place generously some filling on it then bring and close all the edges together. Remove the extra dough and gently flatten it.
Dust the flatten ball with some atta and roll into medium thickens round paratha.
Heat a tawa then place the rolled paratha on it and cook on both sides applying oil till brown spots are seen all over.
Repeat the process till all the dough balls are used up.
Remove in a serving plate and serve with a big drop of white butter along with some curds and pickle.
Enjoy these yummy parathas for your breakfast, lunch or dinner.
Note: For pickle masala you can use homemade masala or from the market.
