Homemade Thai Red Curry Pasta Recipe

Ingredients:

  • 500 gms fusilli pasta or any other type of pasta

  • 1/2 cup red Thai curry paste

  • 1 cup coconut milk powder

  • 1 tbsp garlic chopped finely

  • 1/2 tbsp ginger chopped finely

  • 7-8 nos mushrooms sliced

  • 6-7 nos babycorn cut into thick long

  • 1 zucchini cut into thick long

  • 1 small broccoli florets

  • 1 red & 1 yellow capsicum chopped into long

  • some lemon grass and leaves

  • salt as per taste

Method:

  1. In a pan boil some water add 1 tsp oil and some salt and cook the pasta till soft. Remove from flame and drain the water. Pour some cold water over it and keep aside.

  2. Heat 2 tbsp oil in a pan add the zucchini, babycorn and broccoli sprinkle some salt over it. Cover and cook till the veggies are soft but crunchy. Then add the remaining veggies and cook till soft. Remove and keep aside.

  3. In another pan add 2 tbsp oil saute the ginger and garlic then add the pasta saute for 4-5 minutes. Remove and keep aside.

  4. In the same pan heat 3 tbsp oil saute the Thai paste then add the coconut paste and lemon grass and cook for five minutes. Add the veggies, pasta and salt. Mix well and cook for few minutes.

  5. Remove in a serving bowl.

Serve this yummy pasta with some garlic bread.
