Homemade Rajasthani Gatte Ki Sabzi Recipe
Ingredients:
For Gatte:
2 cups gram flour
1/4 tsp tumeric powder
1 tsp red chili powder
1/4 tsp ajwain (carom seed)
1/4 tsp jeera
salt to taste
3-4 tbsp oil
1/2 tbsp ginger
1-2 green chillies chopped finely
1 tbsp kasuri methi ( dried fenugreek leaves)
warm water for kneading
For Masala:
2 onions finely chopped
2 green chilies finely chopped
1/2 tbsp chopped ginger
1 tsp carom seed ( ajwain)
1 tsp turmeric powder
1 tsp red chili powder
1/2 tsp garam masala
7-8 chopped curry leaves
2 whole red chili
coriander leaves for garnishing
Method:
In a vessel boil 8 cups of water with 1 tsp oil.In the meantime mix all the above ingredients for the Gatte and prepare a medium soft dough by adding warm water as required.
Once the dough is ready make equal shape balls and roll each ball into smooth cylindrical shape just like bread sticks making sure that there are no cracks.
Add all the gatte sticks in the hot water. Cover and cook on medium flame for 15-20 minutes till you see them floating on the surface. Pierce a fork to see if it is cooked.
Once cooked remove from water and let it cool. Then cut into half inch round pieces. Keep aside.
In a pan heat 4-5 tbsp oil , add the ajwain, ginger, green chilies, curry leaves, turmeric powder and the onions. Saute till the onions are soft and light brown in colour then add all the remaining spices to it along with the Gatte . Cook for 5-10 minutes.
Remove in a serving dish and garnish with coriander leaves.
