Homemade Mushroom Pulao Recipe

Ingredients:

  • 2 cups basmati rice

  • 500 gms white whole mushrooms

  • 1 cup peas ( frozen / fresh)

  • 1 bay leaf

  • 1 cinnamon stick

  • 1 green cardamom

  • 3 onions chopped finely

  • 1 green chilli chopped

  • 1 tbsp chopped garlic

  • 1 tbsp chopped ginger

  • 1 tsp shahi jeera

  • 1 tsp turmeric powder

  • 1/2 tbsp chilli powder

  • 1/2 tbsp garam masala

  • salt as per taste

  • 4-5 tbsp oil

  • some chopped coriander leaves for garnishing

Method:

  1. Clean, wash and soak the rice in 3 cups water for about 30 minutes.Drain the water and keep aside for future use.

  2. Clean, wash and chop the mushrooms into big cubes.

  3. In a pressure cooker heat oil then add the shahi jeera when it splutters add the bay leaf, cinnamon stick and green cardamom. Sauté the garlic, ginger, chopped onions and green chilli. Cook on low flame till the onions are soft and translucent. Add the peas, mushrooms and all the dry spices and salt . Cook for a couple of seconds on low flame. Then add 2 cups water and the soaked rice . Mix lightly and close the cooker. Cook upto 3 whistles.

  4. When cooled open the cooker. Mix again and then remove in a serving dish. Garnish with some chopped coriander leaves and serve with curds.
