Homemade Baby Corn Tikka Masala Recipe

Ingredients for Marination:

• 500 gms baby corn

• 1 small green capsicum chopped into cubes

• 1 onion petals

• 1 tbsp garlic chopped finely

• 1 tbsp ginger chopped finely

• ½ cup thick curds (yogurt)

• 1 tbsp chilli powder

• 2 tbsp coriander powder

• 1 tsp turmeric powder

• 1 tbsp jeera powder ( cumin powder)

• ½ tbsp garam masala

• 1 tbsp kasuri methi

• salt as per taste

Ingredients for Gravy:

• 2 big tomatoes

• ¼ cup cashewnuts

• 1 chopped green chilli

•1 tsp turmeric powder

• ½ tbsp chilli powder

• ½ tbsp coriander powder

• 1 tsp jeera powder ( cumin powder)

• 1 tsp garam masala

• salt as per taste

• some chopped coriander leaves for garnishing

Method:

1. Wash and dry pat the baby corn. Chop them into 2 or 3 pieces. Keep aside for future use.

2. Add all the spices of the marination ingredients, ginger and garlic in the curds then add all the chopped baby corn and mix well. Allow it to rest for about 15-20 minutes.

3. Chop he tomatoes into big cubes.In a grinder add the chopped tomatoes and cashewnuts and make a smooth paste .

4. In a wide mouthed non stick pan heat 3 tbsp oil add the marinated baby corn. Cover and cook on low flame stirring at intervals till the baby corn is soft. Remove and keep aside. In the same pan heat 1 tbsp oil and sauté the chopped capsicum and onion petals for a few seconds till they are soft but crunchy. Remove and keep aside.

5. In a pan heat 3-4 tbsp oil Add the tomato puree and chopped green chilli. Cook on low flame stirring at intervals till oil is seen on the sides of the vessel. Add all the spices and cook for few seconds. Then add one cup water and cook again for few minutes. Add the baby corn, onions and capsicum and mix well. If required a little water can also be added if the gravy is too thick. Cook for a couple of minutes and then switch off the flame..

6. Remove in a serving dish and garnish with coriander leaves.

Enjoy this yummy baby corn tikka masala with chapati, paratha or plain rice.
