Homemade Moonglet Recipe
Ingredients:
1 cup split moong dal ( yellow dal)
1 onion chopped finely
1 tomato chopped finely
1 green capsicum chopped finely into cubes
1 green chilli chopped finely
1/4 cup coriander leaves chopped finely
2 tbsp rice flour
1/2 tsp turmeric powder
1 tsp chilli powder
salt as per taste
1 sachet ENO
2 tbsp butter
Method:
Clean, wash and soak the moong dal in water for half an hour.
Drain all the water from the soaked dal and in a grinder grind the dal in to a fine paste without adding any water.
Add the dry spices and rice flour in the batter and mix well.
Divide the batter and all the chopped vegetables into two halves.
In one half add the vegetables and one tsp ENO and mix lightly.
Take a non stick pan , grease it with some oil and then pour the batter to form a thick pancake. Sprinkle some oil around it then cover and cook on low flame till it is brown from below.
Slowly turn and cook on the other side. Make a cut in the center and put one tbsp of butter.
Remove from flame and cut into four pieces .
Repeat the process for the remaining batter and vegetables .
Serve this soft fluffy Moonglet with green chutney or ketchup.
