Homemade Masala Dosa Recipe

Ingredients for Dosa Batter :

  • 3 cups dosa rice or par boiled rice

  • 1 cup urad dal

  • 1/4 cup chana dal

  • 1 cup poha (flattened rice)

  • 1 tsp methi (fenugreek seeds )

  • salt as per taste

Ingredients for Dosa Masala:

  • 7 boiled potatoes

  • 2 onions chopped long

  • 3 green chillies cut slitted

  • 1 tsp chopped ginger

  • 3-4 curry leaves strings cut finely

  • 1 tbsp urad dal

  • 1 tsp mustard seeds

  • 1 tsp turmeric powder

  • 1 tsp chilli powder

  • salt as per taste

  • some coriander leaves chopped finely

Method:

  1. Heat 3-4 tbsp oil in a pan add the mustard seeds when it splutters add the urad dal and sauté for few seconds. Add curry leaves, ginger, chillies , turmeric and onions and cook till the onion is pinkish in colour. Mash the potatoes and add it to the onions along with chilli powder and salt. Cook for 4-5 minutes on low flame. Remove and garnish with coriander leaves. Dosa masala is ready.

  2. Clean and wash the rice and soak it for 4-5 hours.

  3. Similarly clean and wash both the dals with the methi seeds and soak them together in water for 4 -5 hours.

  4. Clean and wash the poha till it is soft just before grinding the rice and dal.

  5. Drain all the water from the rice and dals. In a grinder take the rice and grind it finely and then grind the dals along with the poha finely by adding a little water at a time.

  6. Then mix the rice and dal together and add water if required to get a dosa consistency batter .Keep it to ferment for 8-9 hours in a warm place.

  7. Once the batter is fermented add salt to it and mix well.

  8. Heat a non stick dosa tawa, then sprinkle some water and wipe it with a cloth or tissue towel. Pour a ladleful of the batter on it and with a spoon spread the batter in a circular motion to form a thin round dosa.

  9. Drizzle some oil on the dosa and around it and cook on low to medium flame till the dosa is brown and crispy. Place some potato masala on it and roll it. Remove in a plate.

  10. Repeat till all the batter is used up.

  11. Serve this crispy dosa with potato masala, sambar and green chutney or onion tomato chutney or red chilli coconut chutney.
