Homemade Corn Palak ( Spinach ) Pulao Recipe

Homemade Corn Palak ( Spinach ) Pulao Recipe

Ingredients:

  • 2 cups basmat rice

  • 1 tin corn ( approx 1 cup )

  • 3 bunch palak (spinach)

  • 4 onions chopped long

  • 1/2 tbsp chopped ginger

  • 1/ 2 tbsp chopped garlic

  • 1-2 chopped green chilli

  • 2 bay leaves

  • 1 cinnamon stick

  • 2 green cardamom

  • 2 star anise

  • 1 tsp shahi jeera

  • 1/2 tbsp chilli powder

  • 1 tsp garam masala

  • 1/2 lemon juice

  • salt as per taste

Method:

  1. Clean, wash and soak the rice for half an hour in 3 cups water.

  2. Drain and wash the corn.Keep aside.

  3. Remove the stalk of the palak and wash the palak leaves thourghly.Make purée of 3/4 of the palak and chop the remaining palak finely .

  4. In a pressure cooker heat 5-6 tbsp oil add the shahi jeera when it splutters add the whole garam masala , garlic and ginger saute for few seconds then add all the chopped onions and green chillies. Cook till the onions are soft.

  5. Add the palak purée and cook for 5 minutes then add all the dry spices, salt and lemon juice along with the rice and water. Mix well.

  6. Laslty add the chopped palak, stir well. Close the pressure cooker and cook upto 3 whistles.

  7. Open the pressure cooker once the pressure is released .Mix well and remove in a serving dish.

    Serve this yummy corn palak pulao with pickle and yogurt.
