Homemade Champakali (Namkeen )Recipe

Ingredients:

  • 3 cups white flour (maida)

  • 1/2 cup oil

  • 1 tsp ajwain (carom seeds )

  • 1 tbsp kasuri methi (fenugreek leaves )

  • salt to taste

  • oil for frying

Method:

  1. Slightly crush the carom seeds and kasuri methi on your palms and add it to the flour along with salt and mix well.

  2. Pour the oil in the flour and rub it till it looks like bread crumbs.

  3. Make a semi stiff dough by adding water as required. Keep it to rest for 30 minutes.

  4. Make small equal size smooth balls of the entire dough.

  5. Roll into round shape puris.Make horizontal cuts on the rolled puris as shown in the below image and then start sticking the edges to each other from one end to the other to give it a champakali shape.

  6. Heat oil in a kadai or heavy based vessel.

  7. Fry all the champakali on medium flame till golden brown in colour.

  8. Once it is cooled store it in an airtight container.

    Enjoy these crispy champakali also called karela with your tea /coffee or on festivals.
