Homemade Veg Pad Thai Noodles Recipe

Ingredients:
250 gms flat rice noodles
4 tbsp peanut oil preferred
1 tbsp chopped garlic
1 onion sliced
2-3 bulbs spring onion chopped into big pieces
1/2 cup bean sprouts
1 small yellow capsicum chopped into long
1 small red capsicum chopped into long
1/4 cup chopped purple cabbage
2 nos bok choy chopped finely
3 tbsp fried onions
Ingredients for Sauce:
3 tbsp tamarind pulp
2 tbsp soya sauce
1 tbsp brown sugar
salt as per taste
1/2 lemon
Ingredients for Garnishing:
1/4 cup roasted peanuts
2-3 tbsp fried onions
few spring onion leaves
some bean sprouts
Method:
Boil some water in a vessel with 1 tsp salt and oil then add the noodles and cook on low to medium flame till soft. Drain and keep aside. Do not over cook them.
In a bowl mix all the ingredients of the sauce and keep aside for future use.
Take a pan heat the peanut oil then saute the garlic for a second. Add the sliced onions and cook till soft or translucent.
Add the fried onions , chopped cabbage, capsicum, bok choy , spring onion leaves and bean sprouts. Cook for a minute or two till soft but crunchy. Then add the sauce mixture with 3-4 tbsp water and give it a good stir.
Add the noodles and mix well and cook for a minute.
Remove in a serving dish and garnish with some peanuts, fried onions, spring onion leaves and bean sprouts.
