Homemade Brinjal Chutney Recipe

Ingredients:
1 big brinjal/baingan
3 tbsp thick curds/yogurt
1 small onion chopped finely
1-2 green chilies chopped finely
some chopped coriander leaves
salt as per taste
For Tadka:
1 tsp mustard seeds
1/4 tsp hing /asefodita
1 whole red chilli
Method:
Wash and dry pat the brinjal then roast the brinjal on the gas on low to medium flame turning from one side to another till the brinjal is roasted from all sides. Allow it to cool.
Wet your fingers and remove the peel from the roasted brinjal. Chop or mash it very finely.
In a bowl add the curds, onions, chilies, salt and coriander leaves. Give it a good mix. Then add the mashed brinjal and mix again.
Take a small pan heat 1 tsp ghee then add the mustard seeds when t splutters add the hing and whole chilli. Pour the tadka on the brinjal chutney.
Remove in a bowl and garnish with some chopped coriander leaves.
Enjoy this yummy chutney with, chapati, paratha or rice.
