Homemade Veg Korma Recipe
Ingredients:
1 cup chopped potatoes
1 cup chopped carrots
1 cup chopped french beans
1 cup chopped green capsicum
1 cup peas (frozen)
1 cup paneer (fresh or frozen)
1 cup cauliflower florets (optional)
1 cup curds (yogurt)
3 onions cut finely
2 big tomatoes cut into cubes
2 bay leaves
1 cinnamon stick
10-12 cashewnuts
1/2 tbsp chopped ginger
1/2 tbsp chopped garlic
2 green chillies chopped finely
2 tbsp kasuri leaves
1/2 tbsp red chilli powder
1/2 tbsp kashmiri chilli powder
1 tbsp coriander powder
1/2 tbsp garam masala
1/2 tbsp jeera (cumin ) powder
salt as per taste
coriander leaves for garnishing
Method:
Peel, wash and cut the potatoes into cubes. Peel , wash and chop the beans and carrots into diamond shapes.
Steam the above chopped vegetables till soft.
Grind the tomatoes and cashewnuts into a fine paste.
In a pan heat 2-3 tbsp oil, add the bay leaves and cinnamon stick, then add the garlic, ginger, onions and green chilies..
Cook till the onions are soft then add the tomato paste.
Once the paste is cooked add all the dry spices and sauté for 2-3 minutes.
Add all the vegetables, cook for 5-10 minutes, then add the curds and mix well. Cook for a minute or two.
Remove in a serving bowl and garnish with coriander leaves.
Serve this creamy and delicious sabzi with naan, kulcha or paratha.
