Homemade Tomato Vegetable Soup Recipe

Ingredients:

  • 8 small red tomatoes

  • 1 small piece of cabbage

  • 1 small yellow or any colour capsicum

  • 1 small carrot

  • 1 small potato

  • 1 small onion

  • 1 celery stick

  • 1 leek stick

  • 1 tsp finely chopped garlic

  • 1 tsp pepper powder

  • 1tsp chilli flakes

  • 1/2 tsp dried basil leaves

  • 1/2 tsp oregano

  • few fresh basil leaves broken into pieces (optional)

  • salt as per taste

  • 1 tsp olive oil

Method:

  1. Clean, wash and chop all the above vegetables roughly. In a pressure cooker take 4 cups of water and place all the chopped vegetables in it. Close the cooker and cook till 3 whistles on medium flame.

  2. Once the steam is released open the cooker and allow the vegetables to cool. In a grinder make a paste of the cooked vegetables. Sieve the paste and add all the spices to it and keep aside.

  3. In a pan heat 1 tsp olive oil and sauté the garlic then add the vegetable purée and cook on low flame for 5-10 minutes. Add the fresh basil leaves . Check the consistency if it is too thick a little water can be added to it.

  4. Remove in a serving bowl.

Serve hot this healthy Tomato Vegetable Soup with some garlic bread or toast.

Please note that the above vegetables can be replaced with any other vegetables of your choice.
