Homemade Ragi Soup Recipe

Ingredients:
1 small carrot
7-8 french beans
1 small onion chopped finely
1 small green capsicum
1 tsp chopped garlic
1 tsp chopped ginger
1/2 lemon juice
1 tbsp cornstarch
4 tbsp ragi flour
salt as per taste
1 tsp pepper powder
some chopped coriander leaves
1 tbsp coconut oil preferably
Method:
Peel wash and chop the carrot finely.String the beans from both sides then wash and chop the beans also finely.Wash the capsicum and chop it finely.Keep all the chopped vegetables aside for future use.
In a pan heat the oil then saute the garlic and ginger for a second then add the chopped onions and cook till transparent.
Add the chopped carrot and beans and saute for a minute. Then add 6 cups water, salt and pepper and simmer for 5 minutes on low flame till the vegetables become soft but remain crunchy. Then add the chopped capsicum to it.
Mix the cornstarch and ragi in some water to make a slurry. Slowly add it to the soup and stir is well. Allow it to cook on low flame stirring continuously for another 5 minutes.
Remove in a soup bowl, squeeze some lemon juice and garnish with some chopped coriander leaves.
Enjoy this yummy and super healthy soup hot.
