Homemade Seviyan (Vermicelli) Kheer Recipe
Ingredients:
1 liter full fat milk
1/2 cup seviyan ( vermicelli)
1/2 cup sugar
1/2 tsp cardamom powder
7-8 strands saffron soaked in little warm milk
1 tbsp ghee
few chopped pistachio and cashewnuts
Method:
In a heavy vessel heat the ghee and on low flame roast the seviyan till golden brown.
Add the milk to the seviyan and keep cooking for 10-15 minutes on low flame stirring at intervals.Then add the sugar, cardamom powder and saffron milk. Cook till the milk thickens and the seviyan becomes soft.
Remove in a bowl and decorate with chopped pistachios and cashewnuts.
Serve this yummy seviyan kheer hot or chilled.
Note: Roasted fine seviyan can also be used which takes lesser time and cooks fast as it need not be roasted again.
