Homemade Pumpkin Soup Recipe

Ingredients:

  • 1 kg pumpkin

  • 1 big onion

  • 1 bay leaf

  • 8-10 whole pepper

  • 1 -2 green chilli

  • 1 inch ginger piece

  • 1 tbsp chopped garlic

  • salt as per taste

  • 1/2 cup coconut milk powder

Method:

  1. Peel, wash and chop the pumpkin, ginger and onion into big pieces.

  2. Take a pressure cooker add 2-3 cups water and all the above ingredients without the coconut milk . Cook upto 3 whistles.

  3. When the pressure is released open the cooker and allow the mixture to cool.

  4. In a grinder jar grind the mixture into a smooth paste.

  5. Make a paste of the coconut milk powder by adding a little water and then add it to the pumpkin soup .

  6. Take a boil and add water only if required.

  7. Remove in serving bowls and garnish with some fresh cream and pumpkin seeds.

Enjoy this yummy and healthy soup.
