Homemade Moringa Leaves Stuffed Paratha Recipe
Ingredients for Stuffing:
2 cups moringa leaves (drumstick leaves)
2 onions chopped finely
1 tsp chopped ginger
2-3 green chillies chopped finely
1 tsp jeera (cumin seeds)
1/2 tsp turmeric powder
1 tsp coriander powder
1/2 tsp jeera (cumin) powder
2 tbsp amchur (mango powder)
1 tsp chilli powder
salt as per taste
Ingredients for Paratha Dough:
4 cups multigrain flour or wheat flour
1 tsp ajwain (carom seeds )
salt as per taste
Method:
Clean, wash, dry and then chop the moringa leaves finely.
Heat 1 tbsp oil in a pan add the jeera when it splutters add the ginger, green chillies and onions. Saute till the onions are soft and translucent then add the moringa leaves and all the spices. Cook for 4-5 minutes on low flame stirring at intervals. Remove and allow it to cool. The stuffing is ready.
In a bowl mix all the ingredients for the dough and make a very soft dough by adding water as required. Allow it to rest for 10-15 minutes.
Make equal size balls of the dough. Take one dough ball roll it to form a small disc and fill in 2-3 tbsp moringa stuffing. Bring all the sides together to from a round ball. Dust some flour on a rolling board and roll it to form a round shape paratha of medium thickness.
Heat a tawa, grease it with some oil and place the rolled paratha on it. When it is slightly cooked flip the paratha put some oil over it and let it cook for sometime. Flip again and put some oil on it and let it cook. When brown on both sides remove from the tawa.
Repeat the process till all the dough and filling is used.
Serve this yummy and healthy moringa paratha with yogurt and pickle.
