Homemade Bitter Gourd Peel Stuffed Paratha Recipe

Ingredients For Stuffing :
500 gms karela/bitter gourd peel
1 onion chopped finely
2 green chillies chopped finely
1 tsp chopped ginger
3 tbsp besan/gram flour
1 tsp chilli powder
2 tsp coriander powder
1 tsp jeera /cumin powder
1 tsp garam masala
salt as per taste
some chopped coriander leaves
Ingredients For Dough :
2 cups wheat /multigrain flour
1 tsp salt
oil for cooking
Method:
Peel the karela then sprinkle some salt on the peel. Allow it to rest for about an hour to remove the bitterness from it.
Wash the peel in water 3-4 times then remove in a muslin cloth and squeeze off all the water form it.
Take a bowl add the squeezed karela peel and all the above ingredients excluding the salt.
Take 2 cups wheat atta in a bowl add 1 tsp salt and knead into a very soft dough adding water as required. Allow it to rest for 15-20 minutes.
Add salt in the karela peel mixture just before you want to make the parathas otherwise the mixture will become watery.
Make equal size balls of the dough. Similarly make a little smaller size balls of the karela stuffing.
Take one dough ball dust some flour and with a rolling pin roll into a small chapati. place one karela stuffing ball on to it and close it by bringing all the edges of the ball together. Dust some more flour and roll into a medium thickness paratha.
Heat a tawa then place the rolled paratha on it and allow it to cook for a second then flip sprinkle some oil all over it and cook for a second. Flip again sprinkle some oil and cook again till brown spots are seen all over on both sides.
Remove on a plate and repeat the process till all the dough is used up.
Enjoy these parathas with some yogurt .
