Homemade Mixed Vegetable Pickle Recipe
Ingredients:
250 gms red carrots
1 big shalgam (turnip )
2 big red chillies
1 big green chilli
10 small green chillies
1 big piece ginger
10 garlic pods(optional)
4 tbsp white vinegar
1/2 cup mustard oil
1/2 tsp asefodita
1/2 tbsp red chilli powder
1 tsp turmeric powder
1/2 tbsp kalonji (nigella) seeds
1/2 tbsp methi (fenugreek ) seeds
2 tbsp sauf (fennel seeds)
1/2 tbsp mustard powder
salt as per taste
Method:
Peel the carrots,turnip, garlic and ginger. Wash and let it dry completely. Remove the stem of the chillies and wash them also and let it dry.
Chop the carrots , turnip and ginger into half inch long thick pieces, the chillies into big round pieces and garlic into halves.
In a steamer steam the carrots and turnip for only 3-4 minutes. Remove and let it dry completely.
Grind the sauf and methi seeds coarsely.
Heat the oil and allow it to cool.
In a bowl add all the vegetables, spices and vinegar. Mix well till all the vegetables are well coated with the spices.
Pour the oil when it is slightly warm in the vegetables and give it a good toss.
Store in an airtight glass bottle.
The pickle will be ready to eat in 2-3 days after which it can be refrigerated.

Points to note: Cauliflower or any other choice of vegetable can be added to the pickle. Vegetables should be completely dry and all the utensils used should also be dry.
