Homemade Malai Kofta Recipe

Homemade Malai Kofta Recipe

Ingredients:

For Kofta :

  • 5-6 potatoes

  • 1 tsp chili powder

  • salt to taste

  • oil for frying

For Kofta Stuffing:

  • 1 cup paneer (cottage cheese)

  • 1/4 cup cashew nuts and raisins finely chopped

  • 1 green chili finely chopped

  • 2-3 tbsp coriander leaves finely chopped

  • 1/2 tsp pepper powder

  • salt to taste

    For Kofta Gravy:

  • 4 big onions chopped roughly

  • 4 big tomatoes chopped roughly

  • 1/2 tbsp chopped garlic

  • 1/2 tbsp chopped ginger

  • 1 chopped green chili

  • 1/2 tbsp chili powder

  • 1/2 tbsp jeera powder (cumin powder)

  • 1 tsp garam masala

  • salt to taste

  • 1 tbsp kasuri methi (dried fenugreek leaves )

  • 2-3 tbsp cashewnut powder

  • 1 bay leaf

  • 1 cinnamon stick

  • 4-5 black peppers

  • 2-3 cloves

  • cream and coriander leaves for garnishing

Method:

  1. Boil and peel the potatoes .To make the koftas grate the potatoes add the chili powder and salt , mix well till you get a soft dough .Make equal size small balls of the potato dough.

  2. Mix all ingredients for the stuffing. Take one potato ball then place one tsp of the stuffing in it and give it an oval or round shape. Dust the kofta balls with some cornflour so that they do not break. Repeat the process till all the balls are ready.

  3. In a kadai heat oil and deep fry all the koftas on medium flame till golden brown in colour. Keep aside for future use.

  4. In a vessel heat 1-2 tbsp of oil saute the bay leaf, cinnamon stick, black peppers and cloves then add roughly chopped onion and tomatoes with 1 cup of water. Cook till the onions and tomatoes are soft and there is no water left. Allow it to cool. Once cooled grind into a fine paste.

  5. Again heat 2-3 tbsp oil and saute the ginger, garlic and chili for a second then add the onion tomato paste and all the remaining spices for the kofta gravy. Cook till oil comes out then add the cashewnut powder to it . Cook for 5 minutes. If the gravy is too thick add a little water.

  6. In a wide mouth dish place the koftas and pour the hot gravy on it. Garnish with cream and coriander leaves.

    Serve this mouthwatering koftas with rotis, parathas, kulcha or naans.
