Homemade Lemon Coriander Rice Recipe

Ingredients:
1 cup basmati rice
1 small sliced onion
1 tbsp chopped garlic
1 tsp grated lemon rind
1 lemon juice
1/4 cup chopped coriander leaves
1 tbsp butter
2 tbsp oil
1 tsp oregano
1/2 tbsp chilli flakes
salt as per taste
Method:
Clean, wash and soak the rice in some water for 20 minutes.
After the soaking time cook the rice till soft. Drain out all the water and keep aside for future use.
Heat a heavy based vessel add the butter and oil then saute the chopped garlic . Add the onions and cook till translucent. Add the oregano, chilli flakes, grated lemon rind, half quantity of coriander leaves .Saute for few seconds on low flame then add the cooked rice , salt and lemon juice and give it a good mix.
Remove in a serving dish and garnish with the remaining coriander leaves.
