Homemade Lemon Rice Recipe
Ingredients:
2 cups Basmati Rice
1 cup roasted peanuts without skin
1/4 cup mix of chana and urad dal
1-2 whole red chilli
1 tsp turmeric powder
1/4 tsp asafoetida
1 tsp mustard seeds
2 tbsp lemon juice
1 tbsp curry leaves chopped finely
1/2 tbsp ginger chopped
3-4 green chillies chopped
some coriander leaves chopped
Method:
Clean, wash and soak the rice for about 30 minutes.
Cook till soft,drain the extra water and keep aside.
Wash and soak the dals for 5-10 minutes.Remove the extra water and keep aside.
Take a heavy based vessel , heat 5-6 tbsp oil when hot add the asafoetida and mustard seeds when it starts to splutter add the soaked dals, saute for a minute or two.
Then add the turmeric powder, curry leaves, chillies and ginger.
Add the roasted peanuts and saute for 2-3 minutes on low flame.
Add the cooked rice and salt stir and cook for 4-5 minutes on low flame.
Switch off the gas then add the lemon juice.
Remove in a serving bowl and garnish with coriander leaves.
Serve this tasty lemon rice with curds or Rasam.
