Homemade Kadai Mushroom Recipe

Homemade Kadai Mushroom Recipe

Ingredients:

  • 7-8 white mushrooms

  • 3 tomatoes puréed

  • 1 small onion petals

  • 1 small green capsicum cut into cubes

  • 1 bay leaf

  • 1 cinnamon stick

  • 2 tbsp cashewnut or melon seed powder

  • 2-3 tbsp kasuri methi

  • 1 green chilli chopped

  • 1/2 tbsp chopped ginger

  • 1/2 tbsp chopped garlic

  • 1 tsp jeera (cumin ) seeds

  • 1/2 tsp turmeric powder

  • 1/2 tbsp red chill powder

  • 1/2 tbsp coriander powder

  • 1 tsp jeera (cumin ) powder

  • 1 tsp garam masala

  • salt as per taste

  • chopped coriander leaves for garnishing

  • 1-2 tbsp cream (optional)


Chhayas food - kadai mushroom - ingredients

Method:

  1. Heat 2-3 tbsp oil in a pan, add the bay leaf and cinnamon stick, then add the jeera when it splutters add garlic, ginger and sauté for a minute.

  2. Add the tomato purée and cook on low flame stirring at intervals till oil leaves the sides.

  3. Add all the spices, salt, kasuri methi, cashewnut powder along with the onion petals, capsicum, mushroom and one cup water.

  4. Cover and cook on low flame till the mushroom and capsicum are soft but crunchy. The gravy should be of semi consistency.

  5. Remove in a serving bowl and garnish with coriander leaves and 1-2 tbsp cream.

    Serve this delicious kadai mushroom with naan,kulcha, chapati ,paratha or rice.
