Homemade Dal Pakwan Recipe
Ingredients for Dal :
2 cups chana dal
4 cups water
1/2 tsp turmeric powder
2 tbsp amchur ( mango ) powder
1 tbsp garam masala
5-6 tbsp coriander leaves finely chopped
salt as per taste
For Tadka:
1 tsp jeera (cumin seeds )
2 tsp chilli powder
4-5 green chillies chopped finely
1 tbsp ginger finely chopped
Method:
Pressure cooker the dal with 4 cups water ,turmeric and salt.Cook up to 4-5 whistles.
Once the pressure is released open the cooker then mix the amchur powder and garam masala in it .The dal should be semi thick in consistency.
For the tadka take a small pan heat 4-5 tbsp ghee to it add jeera when it splutters add the ginger ,chilli powder and green chillies.
Remove the dal in a wide mouthed dish and pour the Tadka all over it Garnish with chopped coriander leaves.
Ingredients for Pakwan :
4 cups maida (white flour)
1 tsp jeera (cumin ) seeds
1 tsp ajwain (carom) seeds
6-7 tbsp oil
salt to taste
oil for frying
Method:
In a bowl add maida and mix salt, jeera, ajwain and oil in it. Make a semi hard dough by adding cold water as required. Keep aside for 10-15 minutes.
Knead once again to make a smooth dough. Make small equal size balls of the entire dough.
Take a ball place it on a rolling board and with the help of a rolling pin roll into thin puris. Make marks on the puri with a fork.
Repeat the process till all the balls are rolled into puris.
Heat some oil in a kadai and deep fry all the puris on medium flame till golden brown on both sides. Remove on a kitchen tissue .
Serve the Pakwans with dal, green chutney, sweet chutney and finely chopped onions.
