Homemade Crispy Karela Recipe

Ingredients:
500 gms karela /bittergourd
4 tbsp rice flour
1/4 tsp turmeric powder
2 tsp chilli powder
2 tsp coriander powder
1/2 tsp garam masala
1 tbsp amchur/ mango powder
salt as per taste
oil for frying
some chaat masala for sprinkling
Method:
Wash the karela properly then dry pat them.Cut them lengthwise into half. With the help of a spoon scoop off all the flesh from them. Cut them into 1/4 inch thin long pieces. Sprinkle some salt all over them and allow it to rest for 15 minutes.
After the rest time squeeze them lightly with your palms to remove all the water. This can be done 1-2 times so that all the bitterness is removed from the karela.
In a wide bowl or plate add the rice flour, salt and all the spices then add the squeezed karela in it and give it a good mix till all the karela are well coated with the spices.
Heat some oil in a kadai or heavy bottom vessel. Add little by little the karela and deep fry them on high flame till crispy. Remove them on a tissue/ kitchen towel.
Repeat till all the karela are deep fried.
Sprinkle some chaat masala on the crispy karela.
