Homemade Broccoli Kofta in White Gravy Recipe

Ingredients for Kofta:

  • 1 big broccoli about 500 gms

  • 1 cup grated paneer (cottage cheese)

  • 1 tbsp chopped raisins

  • 1 tbsp chopped chasewnuts

  • 1/2 tbsp chopped green chillies and ginger

  • 1/2 tsp pepper powder

  • 3-4 tbsp cornflour

  • salt as per taste

Ingredients for White Gravy:

  • 4 onion chopped roughly

  • 3-4 green chillies chopped roughly

  • 1 tbsp ginger chopped roughly

  • 1 tbsp finely chopped garlic

  • 1 bay leaf

  • 1 cinnamon stick

  • 2 cardamom

  • 1 tsp garam masala

  • 1 tsp jeera (cumin) powder

  • 1 tsp coriander powder

  • 1/2 tsp pepper powder

  • 1 tbsp kasuri methi

  • salt as per taste

  • 1 cup curds (yogurt)

  • 1 cup cream

  • 1/2 cup cashewnuts and melon seeds

Chhayasfood broccoli kofta in white gravy - ingredients for gravy

Method:

  1. Clean, wash, chop the broccoli into florets and then steam it. Squeeze out the extra water and grate it .

  2. Add the chopped nuts, chilli, ginger, salt and pepper to the grated paneer and mix well.

  3. Mix the cornflour to the grated broccoli and make balls of equal size. Similarly make small balls of the paneer.

  4. Flatten one ball of the broccoli and place the paneer ball into it and bring all the sides together to form a ball. In the same way do for the remaining broccoli and paneer.

  5. Heat some oil in a pan or kadai and deep fry all the koftas one by one on medium to low flame till they are light brown in colour. Keep aside.

  6. In a pan take the chopped onion, ginger, green chillies, cashewnuts and melon seeds in 2 cups water . Cover and cook on low flame till the entire water dries up.

  7. Cool and grind in to a fine paste.

  8. Heat 2 tbsp ghee or butter add the tej patta, cinnamon stick and cardamom then saute the chopped garlic and then add the onion paste.

  9. Cover and cook on low flame for 5 minutes then add the remaining dry spices, salt and kasuri methi.

  10. Add the curds and again cover and cook till bubbles are seen on the top.

  11. Lastly pour in the cream and cook for another 5 minutes. If the consistency is very thick a little water can be added to the gravy.

  12. Take a wide mouthed serving dish pour the gravy and then place the koftas.

Serve this delicious kofta with naan, bread kulcha or puris.
