Homemade Aloo Tamatar Sabzi Recipe
Ingredients:
4 big aloo/ potatoes
2 big tomatoes chopped finely
1 green chili chopped finely
1/2 tbsp ginger chopped finely
1 tsp jeera (cumin seeds)
1/4 tsp asefodita
1 tsp turmeric powder
1- 2 tsp red chili powder
1/2 tbsp coriander powder
1 tsp garam masala
salt as per taste
1 tbsp kasuri methi( dried fenugreek leaves )
1 bay leaf
1 cinnamon stick
1 black cardamon
4-5 tbsp coriander leaves for garnishing
Method:
Peel, wash and cut the potatoes in cubes.
Heat 2-3 tbsp ghee in a pressure cooker add the bay leaf, cinnamon stick and black cardamom and jeera when it splutters add the asefodita, ginger, green chili and tomatoes, cook till ghee comes out from it. Add all the dry spices and cook for another 2-3 minutes. Lastly add the cut potatoes and 4 cups of water.
Close the lid and pressure cook the sabzi upto 3 whistles.
Once the pressure is released open the cooker. If the sabzi is too thick you can add some more water as required.
Remove in a serving dish and garnish with coriander leaves .
Serve hot with parathas, puris or rotis.
Note: This sabzi can be eaten during fast as there is no garlic and onion.
