Homemade Aloo Bhujia Recipe

Ingredients:
4 nos boiled potatoes
2 cups besan (gram flour)
1/2 cup rice flour
2 tbsp oil
1/2 tbsp amchur/mango powder
1 tsp chaat masala
1 tsp turmeric powder
1.5 tsp kashmiri chilli powder
1 tsp coriander powder
1/2 tsp garam masala
1/2 tsp jeera/cumin powder
1 tbsp crushed dried pudina / mint leaves
salt as per taste
oil for deep frying
Method:
Boil and allow the potatoes to cool down. Then peel, grate and mash the potatoes till it forms into a fine paste.
Add all the dry spices, salt and dried pudina leaves to the mashed potatoes then add the besan and rice flour .Mix all the ingredients to gather to form a soft dough. Do not add any water as the potatoes will bind all the ingredients together.
Add 2 tbsp oil to the dough and knead again to from a smooth dough.
Grease/brush a sev machine with some oil. Take some dough and make into long logs and place it into the machine.
Heat some oil in a kadai and then break the sev into the oil. Fry on medium flame for 2-3 minutes on one side then slowly flip and fry on the other side also for 2-3 minutes.
Remove on a tissue towel.
Repeat the process till all the dough is used up.
When cooled crush the sev gently with your hands and store in a airtight container .
