Homemade Vegan Tofu in Cashewnut Gravy Recipe

Homemade Vegan Tofu in Cashewnut Gravy Recipe

Ingredients:

  • 500 gms Tofu

  • 1 green capsicum chopped into big cubes

  • 1 small onion petal

  • 2 onions chopped roughly

  • 4 tomatoes chopped roughly

  • 2 green chillies chopped into halves

  • 1 inch ginger chopped roughly

  • 15 garlic pods

  • 2 tbsp cashewnuts powder or 8 -10 whole cashewnuts

  • 1/2 tbsp kashmiri powder

  • 1/2 tbsp garam masala

  • 1 tsp jeera (cumin ) powder

  • salt as per taste

Method:

  1. Cut the tofu into big cubes and sauté in some oil for 5 minutes. Remove and keep aside.

  2. Heat 1-2 tbsp oil in a pan, add all the chopped onions, tomatoes, ginger, green chillies, garlic and cashewnuts powder with one cup water

  3. Cook till all the ingredients are soft and mushy. Keep aside to cool.

  4. Once it is cooled , grind into a fine paste.

  5. Heat 2-3 tbsp oil in the same pan add the paste and cook for about 5 minutes.

  6. Then add the red chilli powder, jeera powder, garam masala, onions petal and capsicum.

  7. Cook for 5-10 minutes till the capsicum is soft. Then add the tofu.

  8. Remove in a serving bowl.

Enjoy this Vegan tofu with parathas or chapatis.
