Homemade Kathal (Jackfruit) Cutlet Recipe

Ingredients:
1 kg raw tender kathal / jackfruit
1 onion finely chopped
1 tbsp ginger finely chopped
5-6 garlic pods finely chopped
4-5 green chillies finely chopped
1/4 cup coriander leaves finely chopped
1/4 cup pudina/mint finely chopped
1/4 tsp turmeric powder
1/2 tbsp chilli powder
1/2 tbsp chaat masala
1 tsp garam masala
1 tsp jeera/cumin powder
1.5 tbsp amchur /mango powder
1/2 cup besan/gram flour
salt as per taste
Method:
Grease the knife and hands with some oil then peel the skin and chop the jackfruit into big pieces.
In a cooker add the chopped jackfruit with 1 tsp salt and 1 cup water. Cook on medium flame upto 4 whistles.
Once the pressure is released open the cooker and drain all the water from the jackfruit . Allow it to cool then clean the boiled jackfruit by removing all the hard skin from it.
Dry roast the besan on low flame stirring continuously till light brown in colour. Keep aside for future use.
In a bowl add all the above ingredients and mix well. Then add the roasted besan to bind into a dough. In case the dough is still moist a little more roasted besan can be added to it.
Take some dough and make round balls and then then flatten them into medium thickness cutlets.
Repeat the process till all the dough is used up.
Heat a non stick pan and grease it with 4-5 tbsp oil. Place the cutlets on the pan and cook on medium to low flame till golden brown on both sides.
Repeat the process till all the cutlets are done.
Enjoy these yummy cutlets with ketchup and green chutney.
