Homemade Yellow Cucumber ( Vellerikka) Pachadi Recipe

Ingredients:

  • 500 gms cucumber ( Vellerikka) chopped into small cubes

  • 1 cup curds ( yogurt)

  • 1/2 cup grated fresh coconut

  • 2-3 green chillies

  • few curry leaves chopped finely

  • 1/4 tsp asafetida

  • 1 tsp mustard seeds

  • 1/2 tsp turmeric powder

  • salt as per taste

  • some coriander leaves for garnishing

Method:

  1. Peel the yellow cucumber ( Vellerikka) and remove all the seeds. Wash and chop into small cubes.

  2. In a pan boil the cucumber with some water and salt. Cook till soft. Drain the extra water and keep aside for future use.

  3. In a grinder jar add the curds, grated coconut and green chillies and grind to a fine paste. Remove and keep aside.

  4. In a pan heat 1 tbsp oil add asafetida and mustard seeds when it splutters add the curry leaves, boiled cucumber, turmeric, salt and the extra water left from boiling the cucumber. Cook on low flame for few seconds then add the curds paste and cook for few a minute stirring continuously so that it does not curdle. If required a little water can be added to get a semi consistencgravy.

  5. Remove in a serving bowl and garnish with coriander leaves .

    Serve this yummy pachadi with rice or chapati .
