Homemade Vegetable Stew Recipe

Ingredients:

  • I big potato chopped into cubes

  • 1 big carrot cut into diamond shape or cube

  • 1 cup french beans cut into diamond shape or cube

  • 1 cup peas (frozen)

  • 2 onions cut into small cubes

  • 1 green chill chopped finely

  • 1 tsp ginger chopped finely

  • 2-3 strings curry leaves

  • 1 cup coconut milk

  • 1/2 tsp turmeric powder

  • 1 tsp chilli powder

  • 1 tsp jeera powder ( cumin powder)

  • salt as per taste

  • some coriander leaves chopped finely

  • 1 tbsp coconut oil or any regular oil

Method:

  1. In a pan boil 2 cups water with 1 tsp salt then add all the chopped vegetables ( potato, carrot and beans ) in it. Cover and cook on low flame till the vegetables are soft. Keep aside.

  2. Add one cup water to the coconut milk along with salt and all the dry spices , mix well so that there are no lumps in it.

  3. Heat oil in a pan add the curry leaves, ginger, green chilli and onions, Cover and cook the onions till soft. Then add all the cooked vegetables and peas .Pour the coconut milk in it. Cover and cook on low flame for 5- 10 minutes till the gravy thickens slightly.

  4. Remove from flame and pour in a serving bowl. Garnish with coriander leaves.

Serve this yummy vegetable stew with rice, dosa or appam.
