Homemade Vegetable Pulav Recipe

Ingredients:

  • 2 cups basmati rice

  • 3 onions cut long

  • 1 cup peas (frozen)

  • 1 cup french beans cut into long

  • 1 cup carrots cut into long (optional)

  • 2 green chillies cut finely

  • 1/2 tbsp ginger chopped finely

  • 1/2 tbsp garlic chopped finely

  • 2 bay leaf

  • 1 cinnamon stick

  • 1 star anise

  • 5-6 whole peppers

  • 3-4 cloves

  • 1 tsp shahi jeera

  • 1 tsp turmeric powder

  • 1/2 tbsp red chilli powder

  • 1/2 tbsp garam masala

  • 2 tbsp kasuri methi (dried fenugreek leaves )

  • salt as per taste

Method:

  1. Clean, wash and soak the rice in 3 cups water for half an hour.

  2. In a pressure cooker heat 7-8 tbsp oil , add all the whole spices and jeera when it splutters add the garlic, ginger and green chillies.

  3. Add the onions sauté till soft then add the beans and peas sauté for 5 minutes.

  4. Add all the dry spices and salt, sauté for a few minute then add the rice with water.

  5. Mix well and close the cooker. Cook upto 3 whistles.

  6. Once the pressure is released open the cooker, mix well and remove in a serving bowl.

    Enjoy this yummy Pulav with yogurt, pickle and papad.
