Homemade Veg Pad Thai Noodles Recipe

Servings: 3-4 pax

Total Time: 35 minutes

Ingredients:

  • 250 gms flat rice noodles

  • 4 tbsp peanut oil preferred

  • 1 tbsp chopped garlic

  • 1 onion sliced

  • 2-3 bulbs spring onion chopped into big pieces

  • 1/2 cup bean sprouts

  • 1 small yellow capsicum chopped into long

  • 1 small red capsicum chopped into long

  • 1/4 cup chopped purple cabbage

  • 2 nos bok choy chopped finely

  • 3 tbsp fried onions

Ingredients for Sauce:

  • 3 tbsp tamarind pulp

  • 2 tbsp soya sauce

  • 1 tbsp brown sugar

  • salt as per taste

  • 1/2 lemon

Ingredients for Garnishing:

  • 1/4 cup roasted peanuts

  • 2-3 tbsp fried onions

  • few spring onion leaves

  • some bean sprouts

Method:

  1. Boil some water in a vessel with 1 tsp salt and oil then add the noodles and cook on low to medium flame till soft. Drain and keep aside. Do not over cook them.

  2. In a bowl mix all the ingredients of the sauce and keep aside for future use.

  3. Take a pan heat the peanut oil then saute the garlic for a second. Add the sliced onions and cook till soft or translucent.

  4. Add the fried onions , chopped cabbage, capsicum, bok choy , spring onion leaves and bean sprouts. Cook for a minute or two till soft but crunchy. Then add the sauce mixture with 3-4 tbsp water and give it a good stir.

  5. Add the noodles and mix well and cook for a minute.

  6. Remove in a serving dish and garnish with some peanuts, fried onions, spring onion leaves and bean sprouts.
