Homemade Turai Ki Sabzi Recipe

Ingredients:

  • 1 kg turai ( ridge gourd)

  • 1/2 cup moong dal mangodi

  • 1 green chilli chopped finely

  • 1 tsp ginger chopped finely

  • 1/4 tsp asefodita

  • 1 tsp jeera (cumin seeds )

  • 1 tsp turmeric powder

  • 1 tsp chilli powder

  • 1/2 tbsp coriander powder

  • 1 tsp jeera powder (cumin powder)

  • 1/2 lemon juice

  • salt as per taste

  • some coriander leaves chopped finely for garnishing

Method:

  1. Peel, wash and chop the turai into quarter inch round disc.

  2. Break the. Mangodi into small pieces.

  3. In a kadai heat 2 tbsp ghee n and roast the mangodi on low flame stirring continuously till golden brown in colour. Keep aside.

  4. In the same kadai take 1 tbsp ghee add the asefodita and jeera when it splutters add the turmeric, ginger, green chillies along with the chopped turai, salt and 1/2 cup water. Cover and cook on low flame stirring at intervals.

  5. When the turai is semi cooked add in all the dry spices and roasted mangodi. Again cover and cook on low flame till the remaining water dries.

  6. Remove in a serving bowl add lemon juice and garnish with chopped coriander leaves.

Enjoy this healthy and tasty turai ki sabzi with paratha or chapati.
