Homemade Thai Macaroni Salad Recipe

Ingredients:

  • 1 + 1/2 cup small macroni pasta

  • 1 big carrot

  • 1 big green capsicum

  • 3/4 cup Thai chilli sauce ( Kimball Brand)

  • 1/2 tbsp chilli flakes

  • 1/2 cup crushed roasted peanuts

  • 1/2 lemon juice

  • salt as per taste

Method:

  1. In a vessel boil some water with one tbsp oil and 1 tsp salt then add the macaroni pasta and cook till soft. Drain the water out and then pour cold water over the macaroni. Spread the macaroni on a plate and allow it to cool .

  2. Peel, wash and cut the carrot into round shape then steam it till semi soft.

  3. Wash and cut the capsicum into small cubes.

  4. In a bowl add all the above ingredients and mix well.

  5. Keep the salad in the refrigerator and serve cold.
