Homemade Sweet Potato Paratha Recipe

Ingredients:
1 kg shakarkandi ( sweet potato)
3 cups multigrain or wheat flour
1/2 tbsp chopped ginger
2 chopped green chillies
1 tsp ajwain ( carom seeds )
1 tsp turmeric powder
1 tbsp chilli powder
1/2 tbsp garam masala
1 tsp pepper powder
1 tbsp kasuri methi ( dried fenugreek )
salt as per taste
some chopped coriander leaves
oil for cooking
Method:
Wash the shakarkandi then take a pressure cooker with some water and boil it for 2 whistles.
Open the cooker once the pressure is released. Remove the shakarkandi and allow it to cool then peel and grate them.
In a bowl mix the flour and all the spices. Add the grated shakarkandi and make a semi soft dough by adding water as required.
Make equal size balls of the entire dough.
Take a dough ball dust some flour on a rolling board and roll the ball into medium thickness round disc.
Heat a tawa and place the rolled paratha on it. Allow it to cook till small bubbles are seen on it then flip the paratha apply some oil and cook for a minute on medium flame. Flip again apply some oil and let it cook for one more minute. Continue cooking till brown spots are seen on both sides.
Remove on a plate and repeat the process till all the dough balls are used up.
Enjoy this healthy paratha for breakfast, lunch or dinner with curds and pickle.
