Homemade Suran Cutlets Recipe

Ingredients:

  • 500 gms Suran (yam)

  • 1 big onion chopped finely

  • 2-3 green chillies chopped finely

  • 1 tbsp ginger chopped finely

  • 2 tbsp garlic chopped finely

  • 1/4 tsp asefodita

  • 1 tsp turmeric powder

  • 1 tsp chilli powder

  • 1/2 tsp garam masala

  • 1 /2 tsp chaat masala

  • salt as per taste

  • some chopped coriander leaves

  • oil for frying

Ingredients for Coating:

  • 1/4 cup maida

  • 1/4 cup cornflour / cornstarch

  • 1 tsp salt

  • 1/2 cup bread crumbs

Method:

  1. Peel, wash and chop the yam into big pieces. Boil it either in a pressure cooker up to 2 whistles or in a vessel till soft.

  2. Remove from water and allow it to cool then grate it.

  3. In a pan heat 1 tbsp oil and saute the garlic and ginger then add the onions and green chilies. Cook on low flame till translucent. Add asefodita, turmeric powder and chilli powder. Cook for a minute. Remove in a plate and let it cool. Then add it to the grated yam along with garam masala, chaat masala, salt and chopped coriander leaves and mix well.

  4. Make equal size balls of the mixture and then with your palms flatten it to give the shape of a cutlet.

  5. In a bowl mix maida, cornflour and salt. Add water to make a semi consistency slurry.

  6. Take one cutlet and dip it into the slurry then remove and cover it with bread crumbs.

  7. Repeat the process till all the cutlets are well coated with the bread crumbs.

  8. Heat oil in a kadai and deep fry the cutlets in small batches on low flame till golden brown on both sides. Remove on a kitchen towel.

  9. Place the cutlets on a serving dish and serve with green chutney and ketchup.
