Homemade Sugar free Khajur Barfi (Dates and Nuts Roll) Recipe
Ingredients:
2 tbsp ghee
2 tbsp poppy seeds (Kus kus )
1 pinch nutmeg powder
1 tsp cardamom powder
500 gms dates paste or seedless dates chopped finely
2 tbsp chironji
2 tbsp pistachio
1/2 cup almonds
1/2 cup walnuts
1/2 cup cashewnuts
Method:
Chop and dry roast the almonds, cashewnuts and walnuts in a pan on medium flame for 1-2 minutes.
In the same pan add the ghee and fry the poppy seeds for few seconds on low flame then add the dates paste or chopped dates, cardamom powder, nutmeg and all the dry fruits without the pistachio and mix well.
Remove it in a plate and allow it to cool down.
Make equal balls of the mixture paste and prepare long logs.
Slice the pistachio thinly and place it on a plate then roll the logs on it.
Wrap them in aluminum foil and freeze them for about 2 hours.
Remove from the freezer, unwrap them and cut into round thick disc.
This healthy sugar free barfi can be stored for almost a month in an airtight container.
