Homemade Stuffed Parwal Sabzi Recipe

Ingredients:

  • 500 gms parwal (pointed gourd)

  • 1/4 cup besan (gram flour)

  • 1/4 tsp asefodita

  • 1 tsp jeera (cumin ) seeds

  • 1 tsp turmeric powder

  • 1/2 tbsp chilli powder

  • 1 tbsp coriander powder

  • 1 tsp jeera (cumin) powder

  • 3 tbsp fennel ( sauf ) seeds roughly grinded

  • 1 tsp garam masala

  • 1 tbsp amchur powder ( mango powder)

  • salt as per taste

  • some chopped coriander leaves

  • 4-5 tbsp mustard oil

Method :

  1. Peel the parwal and then wash them. Make a slit in the middle without cutting it through. Scoop out all the seeds and extra pulp from all the parwal in order to stuff the filling in the center,

  2. In a pan heat 1-2 tbsp mustard oil then add the jeera and asefodita when it splutters add the besan and roast on low flame till it is cooked. Then add all the dry spices and salt and mix well. Remove from flame and let the stuffing cool.

  3. Take a parwal and fill in some stuffing and close tightly. Repeat the process till all the parwal are filled. If the stuffing masala is left keep it aside.

  4. In the same pan heat 3-4 tbsp oil and place the parwal one by one in the pan. Cover and cook on low flame. When cooked on one side turn and again cover and cook till fully cooked from all sides. Add the remaining masala stuffing and cook for 2-3 minutes.

  5. Garnish with coriander leaves.

Serve this yummy Stuffed Parwal Sabzi with chapati or parathas.
