Homemade Stuffed Bharwa Tinda Recipe

Ingredients For Stuffing :

  • 1 kg small tinda (apple gourd) without seeds

  • 1/4 tsp asefodita

  • 1/2 tsp turmeric powder

  • 1 tbsp chilli powder

  • 3 tbsp dhania ( coriander ) powder

  • 1 tbsp jeera ( cumin) powder

  • 1/2 tbsp garam masala

  • 4 tbsp sauf ( fennel seeds ) roughly grounded

  • 2 tbsp amchur powder ( mango powder)

  • salt as per taste

Ingredients for Gravy :

  • 4 medium onions

  • 1 inch ginger

  • 5 garlic pods

  • 2-3 green chillies

  • 2 big tomatoes

  • 1/4 tsp asefodita

  • 1 tsp jeera (cumin seeds )

  • 1/2 tsp turmeric powder

  • 1/2 tbsp chilli powder

  • 1/2 tbsp coriander powder

  • 1/2 tsp garam masala

  • some chopped coriander leaves for garnishing

  • salt as per taste

Method:

  1. Peel, wash and dry the tinda. Make a cross in each tinda in such a way that the pieces do not separate or fall apart. Keep aside.

  2. Mix well all the dry spices of the stuffing. With a spoon or hands fill this spice masala inside each tinda and slightly press it so that the masala does not come out while cooking.

  3. Peel, wash, chop the onions, ginger, garlic and chillies into big cubes then grind together to make a fine paste.

  4. Chop all the tomatoes and in a grinder make a smooth purée.

  5. In a kadai heat 3 tbsp oil add the asefodita and jeera when it splutters saute the onion paste till it leaves the sides of the vessel.Then add the tomato purée and again cook for 5-10 minutes. Add the remaining dry spices of the gravy ingredients and salt. Cook the paste till drops of oil are seen on the top. Place one by one the stuffed tinda along with one cup water. Cover and cook on low flame flipping and turning each tinda slowly so that it cooks and is soft on all sides.

  6. Remove from flame and place the stuffed tinda in a serving dish and garnish with chopped coriander leaves.

Enjoy this yummy stuffed tinda with rice, chapati or parathas.
