Homemade Spiny Gourd Sabzi Recipe
Ingredients:
500 gms spiny gourd
2 big onions cut into long
1 big tomato cut into long
1 cup coconut milk
1 chopped green chilli
1 tsp chopped ginger
3-4 string curry leaves chopped finely
1 tsp jeera ( cumin seeds )
1/2 tsp turmeric powder
1 tsp chilli powder
1 tsp coriander powder
1/2 tsp jeera powder (cumin powder)
salt as per taste
some chopped coriander leaves for garnishing
Method:
Wash the spiny gourd and cut it into thick round or long slices.
In a pan heat 2 tbsp oil then add the jeera when it splutters add the chopped curry leaves ginger. Add the onions and cook on low flame till soft and translucent.. Add the tomatoes and cook till soft and mushy. Then add all the dry spices , salt and sliced spiny gourd ,mix well.
Cover and cook till soft if required a little water can be added. Once soft add the coconut milk and cook on low flame for few seconds or till the the gravy thickens.
Remove in a serving dish and garnish with chopped coriander leaves.
Enjoy this yummy and creamy sabzi with chapati or rice.
