Homemade Roasted Vegetable Salad Recipe

Ingredients:

  • 2 big zucchini

  • 2 big orange carrots

  • 8-10 baby corn

  • 500 gms yellow pumpkin or yellow squash

  • 500 gms baby potatoes

  • 12-14 baby tomatoes

  • 1 big red or any colour capsicum

  • 1 onion petals

For Seaoning :

  • 2 tbsp mix herbs (oregano,basil & thyme)

  • olive oil

  • 1 tbsp pepper powder

  • salt as per taste

Method:

  1. Wash and then semi boil the baby potatoes in a pressure cooker with one tsp salt. Peel and cut into halves.

  2. Wash the baby corn and capsicum. Cut into big cubes.

  3. Peel and wash the carrots. Wash also the zucchini. Cut the carrots and zucchini into thick round pieces.

  4. Peel, wash and cut the pumpkin into big cubes.

  5. In a bowl take all the chopped vegetables along with onion petals and whole baby tomatoes. Add one tbsp herbs , a little salt , half tbsp pepper, 3-4 tbsp olive oil and mix well so that all the vegetables are coated with the spices.

  6. Arrange the vegetables in a baking tray and bake it for 20- 25 minutes in a preheated oven at 180 C till all the vegetables are soft.

  7. Remove and allow it to cool. Mix the remaining spices in the roasted vegetables and a little olive oil if required.
