Homemade Rajasthani Gatte Ki Gravywali Sabzi Recipe

Ingredients:

For Gatte:

  • 2 cups besan (gram flour)

  • 1/4 tsp turmeric powder

  • 1 tsp red chili powder

  • 1/2 tsp ajwain (carom seed)

  • 1/2 tsp jeera (cumin seeds)

  • salt to taste

  • 3-4 tbsp oil

  • 1/2 tbsp ginger

  • 1-2 green chili chopped finely

  • 1 tbsp kasuri methi

  • somewarm water for kneading

For Gravy :

  • 1/2 cup curds (yogurt)

  • 2 green chilis finely chopped

  • 1/2 tbsp chopped ginger

  • 1 tsp ajwain (carom seed )

  • 1/2 tsp turmeric powder

  • 1 tsp red chili powder

  • 1/2 tsp garam masala

  • 7-8 curry leaves chopped

  • some coriander leaves for garnishing

Method:

  1. In a heavy based pan boil 8 cups water with 1 tsp oil.

  2. In a bowl mix all the above ingredients for the Gatte and make a medium soft dough adding warm water as required.Allow it to rest for 10 minutes.

  3. Once the dough is ready make equal shape balls and then roll each ball into smooth cylindrical shape just like bread sticks ensuring that there are no cracks.

  4. Add all the Gatte sticks in the hot water and cook on medium to low flame for 15-20 minutes till you see them floating on the surface.Pierce a fork to see if it is cooked.

  5. Once cooked remove from water and let it cool. Keep the water to be used for the gravy.Cut into round thick or thin pieces as per your choice.Keep aside.

  6. In a pan heat 2-3 tbsp oil add the carom seeds, ginger, green chilis, curry leaves, turmeric powder and curds and keep stirring for 5-10 minutes on low flame so that the curds does not curdle. Then add all the chilli powder and garam masala to the gravy along with the Gatte . Cook for 5-10 minutes.If the consistency of the gravy is too thick add water which is left after boiling the Gatte. Cook for about 5 more minutes.

  7. Remove in a serving dish and garnish with coriander leaves.
