Homemade Pani Puri Water Recipe

Ingredients for the Pani:

  • 1/2 cup mint leaves (pudina)

  • 1/4 cup corainder leaves (dhania)

  • 6-7 green chillies or as per taste

  • 1 big piece ginger

  • 1 raw mango ( optional )

  • 1/2 lemon juice or as per taste

  • salt as per taste

  • 1 tsp black salt

  • 1/2 tsp pepper powder

  • 1 tsp roasted cumin powder

  • 1/2 tsp asefodita

  • 6-7 glasses of water

  • some boondi, chopped corainder and mint leaves for garnishing

Ingredients for the Masala:

  • 1 cup boiled yellow vatana ( yellow dried peas)

  • 3-4 boiled and mashed potatoes

  • 1 cup mix of boiled whole moong and black chana

  • salt as per taste

  • 1tsp chilli powder

  • 50-75 puri for the pani

  • sweet chutney

  • green chutney

Method:

  1. Clean and wash the mint, corainder leaves, raw mango, green chillies and ginger.Chop them and grind all of them into a fine paste.Sieve and keep aside.

  2. Take water in a vessel add the paste and all the remaining ingredients and mix well.Keep it in a glass jar in the refrigerator.

  3. For the masala you can use only yellow vatana.Clean wash and pressure cooker it with 1 tsp turmeric powder, red chilli powder and salt upto 3 whistles. Alternatively boiled potatoes, moong and black chana can be used for the masala by mixing all of them together with salt and chilli powder.

  4. Garnish the pani with some boondi ,chopped mint and corainder leaves.

  5. For plating take a puri make a hole in the center put some masala, green , sweet chutneys and some pani.
