Homemade Panchmel Sabzi Recipe
Ingredients:
500 gms potatoes
500 gms mooli (white radish)
250 gms small brinjals
500 gms turai (ridged gourd)
750 gms tomatoes preferably green ones
1 tbsp ginger chopped finely
4-5 green chillies chopped finely
1/4 tsp asefodita
1 tsp jeera (cumin ) seeds
1 tsp turmeric powder
1/2 tbsp red chilli powder
1/2 tbsp kashmiri chilli powder
1/2 tbsp coriander powder
1/2 tbsp jeera (cumin ) powder
1/2 tbsp garam masala
salt as per taste
chopped coriander leaves for garnishing
Method:
Peel and wash the potatoes, radish and turai. Cut them into thick cubes.
Wash and chop the tomatoes finely.
Wash and cut the brinjals into cubes and soak them in salt water for 10-15 minutes to remove the bitterness.
In a kadai heat 4 tbsp oil add asefodita and jeera when it splutters add the turmeric powder, chopped potatoes and radish. Cover and cook on low flame stirring at intervals till the vegetables are semi soft.
Then add the chopped tomatoes and cook till the tomatoes are mushy. Add the chopped brinjals and turai. Again cover and cook. Then add all the dry spices and cook on high flame till the sabzi is dry.
Remove in a serving bowl and garnish with coriander leaves.
Serve this delicious sabzi with pooris.
