Homemade Mexican Burrito Bowl Recipe

Ingredients for Burrito Bowl :

  • 2 cups tin/can black beans

  • 2 cups tin/can rajma (red kidney beans)

  • 2 cups tin /can sweet corn

  • 2-3 lettuce leaves chopped into big cubes

  • 2 big tomatoes chopped into big cubes

  • 1 big onion chopped into big cubes

  • 1 cup brown or mexican rice boiled

  • 1 box sour cream

  • 1 packet tortilla nacho cheese chips

Guacamole sauce:

Ingredients

  • 6 ripe avocados

  • 1 small onion finely chopped

  • 1 lemon juice

  • 1 tsp pepper

  • salt as per taste

Method

  1. Peel the avocado and cut into big pieces . Mash it with a fork to form a fine paste.

  2. Add the remaining ingredients and mix well.

  3. Guacamole sauce is ready.

Salsa sauce:

Ingredients

  • 6-8 red ripe tomatoes

  • 1 big onion chopped finely

  • 2-3 green chilies chopped finely

  • 1 tbsp ketchup

  • 1 tbsp chilli sauce

  • 1 tsp pepper

  • 1 /2 tbsp lemon juice

  • salt as per taste

Method

  1. On medium flame keep the tomatoes on the gas burner and cook till the skin turns blackish and starts coming out.

  2. Once all the tomatoes are done remove the skin and deseed them. In a grinder take the tomatoes and grind to a fine puree.

  3. Mix all the remaining ingredients in the tomato puree .

  4. Salsa sauce is ready.

 

Final Step for Plating the Mexican Burrito Bowl:

  1. Mix all the above ingredients for the Burrito Bowl together, leaving out the sour cream and chips.

  2. Take a serving bowl add 1/4 cup cooked rice then layer it with the beans and vegetables. Place on one side the guacamole sauce and on the other side the salsa sauce .In the center put a big spoon of sour cream and drop in some tortilla nacho chips al over .
