Homemade Makhana Bhel Recipe

Ingredients:
1.5 cups makhana/fox nuts/ lotus seeds
1/4 cup peanuts with or without skin
2 tbsp sweet and sour chutney
2 tbsp green chutney
1 small onion chopped finely
1 small tomato deseed and chopped finely
1-2 green chillies chopped finely
1/4 tsp turmeric powder
1 tsp chilli powder
1 tsp chaat masala
6-7 puri
1/4 cup nylon sev
some chopped coriander leaves
salt as per taste
2 tbsp ghee
Method:
Heat 1 tbsp ghee in a non stick pan and roast the makhana on low flame till they are crispy. Press it with your fingers if it breaks easily the makhana are done. Move them to the side of the pan and add 1 tsp ghee then add turmeric and chilli powder. Mix the makhana and roast it for another 1 minute.
Remove in a bowl and keep aside for future use.
In the same pan heat the remaining ghee and fry the peanuts till golden brown in colour.
Remove the peanuts also in the same bowl.
To the makhana and peanuts add the chopped onions, tomato, green chilli, salt, chaat masala, sweet chutney, green chutney then give it a good mix. Break the puris in it and then garnish it with chopped coriander leaves and sev.
Note: The bhel has to be prepared just when it has to be eaten otherwise it will turn soggy.
