Homemade Little Millet ( Kutki ) Upma Recipe

Ingredients:
1 cup little millet/kutki/sama/gajro
1 big chopped onion
1-2 chopped green chillies
1 tsp chopped ginger
2-3 strings chopped curry leaves
1/2 lemon juice
1 tsp mustard seeds
salt as per taste
some chopped coriander leaves
4 tbsp grated coconut
Method:
Clean, wash and soak the little millet in 1 cup of water for 10 minutes.
Heat a pan with 2 tbsp oil add the mustard seeds when it splutters then add the curry leaves and ginger saute for a second. Then add the chopped onions and green chilies and cook on low flame till the onions are translucent and soft.
Drain the water from the little millet and keep it aside for future use.
Add the soaked little millet to the pan and roast for 5 minutes on low flame stirring continuously.
Boil 2 cups water along with the drained water from the millet. Then add it to the little millet along with the salt. Cover and cook on low flame till the millet is soft and all the water dries. In case the millet is not soft 1/2 cup boiled water can be added and then cook again till the millet is completely soft.
Once the millet is cooked add the lemon juice, grated coconut and coriander leaves.
Note: Alternatively the kutki can be cooked first in 2-3 cups water till it is soft and water dries completely. It then has to be added to the cooked onions and then step 6 has to be followed.
